West African Style Beef Stew
  • Season 1 -kilo of cut beef with salt and pepper. Heat a large non-stick pot over high heat and add some oil. Add the beef and sear on all sides until dark ~ 5 mins. Remove from pan and set aside.
  • Reduce the heat to medium - low. Dice ½ a large onion and add to the pan. Fry until it becomes soft, about 5 mins.
  • Return your beef to the pan and add 180g jar of Pepper sauce with 100ml of beef stock.
  • Cover the pan and cook till beef is tender or cooked as desired.
  • Season with salt and chili pepper (optional).
  • Serve with rice, potatoes or boiled plantain. and vegetables.

Tips

  • Cooking time will depend on the cut of beef.
  • For a hearty RO’s style stew, add potatoes, carrots, squash or pumpkin in the last 20 minutes of cooking.
  • Slow cook for richer depth of flavour.
