Heat 2 tablespoons of palm oil in a saucepan on low heat

Add half an onion (chopped) an sweat for a few minutes.

Add 180g RO’s Pepper Sauce with 200ml of water or fish stock and bring to the boil.

Add 400g cooked black-eyed beans, leave to simmer for 10 mins.

Season with salt and pepper to taste.

Serve with fried plantain.
