Serves 2
- Season 4 chicken thighs with salt.
- Combine the juice of 1/2 lemon, 2 Tbsps oil and RO’s Fire sauce in a mixing bowl
- For medium spice use 1/2 tsp of Fire sauce per chicken thigh.
- Put the thighs in the liquid and mix in, cover all of the chicken with the mixture.
- Leave to marinade in the fridge overnight for intense flavour or at least 2 hours.
- Roast in the oven, grill or bbq on moderate heat, till chicken is cooked.
- Serve with lime wedges and sauce for dipping.
You can also add a teaspoon or two of your Fire sauce to your mayo or ketchup for create a dip packed with flavour...
