1. In saucepan, fry onion with some oil until soft. Add paste and 250g parboiled rice. Stir thoroughly to coat rice.
2. Add enough stock to cover the rice by about an inch. Mix again and bring to the boil.
3. Reduce heat to low, cover with foil and a lid and cook for 20-25 mins.
4. Turn off heat. Leave to rest for 30 minutes. Stir through and season to taste. Serve with fried plantain and vegetables.
