Jollof Rice

Serves 4

 

1.     Heat 2 Tbsp of oil in a heavy bottomed pan and add your RO’s Jollof paste and 250g of washed and drained rice.

2.     Mix thoroughly to ensure every grain is coated with paste.

3.     Add 400-500ml of stock, you will need enough stock to cover the rice by about an inch. Mix thoroughly and bring to just boiling.

4.     Reduce heat to simmer, cover with foil and or lid and cook till rice is tender, cooking time will depend on type of rice.

5.     Check after 10-15 minutes, add more stock, if necessary, don’t worry if it catches on the bottom, this will add to the smokey flavour.

6.     Once rice is cooked, remove lid, season with salt and add a small cube of butter (optional), fluff with a fork and leave to rest for about 15 minutes.

7.     Serve with fried plantain and or vegetables.
